Shanties from the Seven Seas - Stan Hugill
One of; if not the most popular books about sea shanties. Stan Hugil is known as "The Last Working Shantyman" as he lived through times where shanties were still used. The book contains 400+ shanties as well as additional history from Stan himself.
English Folk-Chanteys - Cecil James
This is considered by scholars to be of cultural importance. This book contains songs which were collected by the author, Cecil James, who with the help of Rev. A. A. Brockington and Mr. Fleetwood Stileman investigated, and consequently captured the lyrics and notes of used by the sailors of the time, published in 1914. This is in the public domain, so it can be found for free online, for example here. You can however purchase various physical copies.
